š¶ So here’s what you’re going to need…
- Sweet Potatoes x 2
- Sweet Chilli Sauce
- Handfull of fresh Coriander
- Salt & Pepper
Method
Preparation
- Peel the sweet potatoes
- Slice them finely – they just cook so much quicker!
- Chop the coriander
Cooking
Whilst you can cook this outdoors – I tend to boil the sweet potatoes over the stove then move outside and keep them in the pan to just keep warm
- Place the thinly sliced sweet potato in a pan, cover with boiling water and heat on a medium to high heat
- When the sweet potato is cooked (it’ll take about 5 mins), drain and mash
- Add a good dose of sweet chilli sauce, a pinch of salt and black pepper and the chopped coriander and mix throughly
